Why, according to Judaism, did G-d give 613 commandments to the Jews and to the Gentiles he only gave us 7 commandments? Why did He put that extra burden on the Jews?

Shalom, we read in Job 1:20: 'At this, Job got up and tore his robe and shaved his head.
Then he fell to the ground in worship' when he had learned about his family members having been killed.
It was very tragic for him of course.
My question is why did Job shave his head when the verse in Leviticus states the following: 'Do not cut the hair at the sides
of your head or clip off the edges of your beard.'- Leviticus 19:27?
I have heard that the reason the command in Leviticus 19:27 was given is because the pagans of that time cut their hair in a pagan ritual for their dead. Why did Job shave his head in that instance when the verse says one ought not to?

So Surah Maryam is generally about Mary, the mother of Jesus. I will quickly post verses in interst.
19-He responded, “I am only a messenger from your Lord, ˹sent˺ to bless you with a pure son.”

27-Then she returned to her people, carrying him. They said ˹in shock˺, “O Mary! You have certainly done a horrible thing!
28-O sister of Aaron! Your father was not an indecent man, nor was your mother unchaste.”
And you may quickly realize why I wanted to post this here. These 2 different people are mixed up since they have same name. My friend's favorite theologist explains this as "Mary in this text indeed is not Aaron's sister. But she shares the sames roots (descendant of Amram) so they condemn her action by stating her roots.
Which is suspicious. I mean sister? This sound like more "kunya" as Arabs use. Is there any Jewish tradition in any Jewish tribe like this. Is there any hebrew text that such a language used for adressing a person?
